The Vines of Burgundy
There
exists in Burgundy eight types of authorized
vines
:
- The Gamay
- The Pinot Beurot
- The Meulon
- The Sauvignon Blanc
- The César
- The Aligoté
- The Pinot Noir
- The Chardonnay
In fact the last three will interest us
more particularly since they are the ones used at the
Domain.
Black Pinot and Chardonnay are the most noble used and
most used types of vines.
The Aligoté

The
Aligoté is a white type of vine used and authorized
only in "Burgundy Aligoté", "Bouzeron"
and in Cremant of Burgundy labels.
This type of vine gives a sharp and fruity wine.
It is a robust type of vine which resists diseases and which
adapts very well to various types of soils.
The
Bourgogne Aligoté of the Domain
obtained the silver medal of the agricultural and wine open
competition in 2002. |

The
Chardonnay |

White
type of vine with white juice, which was successfully established
in various countries: Australia, The United States, Argentina,
Austria...
Its favourite soil remains the rather argillaceous one.
Chardonnay is vigorous and productive and stands very well
ageing out of barrels of oak.
It gives very pure, fine and intense flavours.
The Bourgogne
Blanc Côte Chalonnaise of the Domain
is a wine carried out with Chardonnay.

The Pinot Noir |

Black
with white juice, Pinot Noir is a type of vine having extremely
complex flavours which makes it difficult to cultivate apart
from in Burgundy.
Pinot Noir appreciates the well drained limestones slopes.
The complex flavours of Pinot Noir are varied and can change
in a significant way according to the age of the wine :
when it is young, one can expect to discover flavours of
red fruits (blackcurrants, cherries, strawberries...), but
also of tobacco, hay or mushroom when it is older.
Black Pinot has a natural tendency to produce slightly coloured
wines, whereas at the same time it is the type of vine which
is the richest in polyphenols (cardio-protective molecule)
It is a grape which matures early and which is ever better
when used with low output.
This is why it is possible to sacrifice part of the production
to privilege quality.
Thus the Domain carries out a green vintage (see photo),
which consists in cutting part of the grape at the beginning
of the summer to reduce the number of grapes and thus make
it possible for the remaining bunches reach perfect maturation.
The Mercurey
and Bourgogne
Rouge Côte Chalonnaise are the two
labels produced with Pinot Noir by the Domain. |
